Spicy Andouille and Rice

 

Here is a recipe for you that is a super easy, quick and nutritious meal that anyone can whip up! A complete, whole meal that doesn’t even need a side dish to go with it. I’m blessed to have a brother in law who also doubles as an amazing chef – who gave me this andouille, and I came up with the recipe to go with it. As a side note – Andouille is a bit higher on the spicy scale than say, your classic kielbasa, which has no spice at all. When I had this for lunch the day after, it had only gotten spicier.. So if you’re not into spicy, just throw in that kielbasa, and it will work just as well. ¬†Over all, it’s a healthy, easy meal that anyone will love. Ingredients:

  • 1 cup of cooked rice
  • 1 cup chopped andouille sausage
  • 1/2 cup finely diced sweet peppers, seeds and veins removed
  • 1/2 cup finely diced onion
  • 1/2 teaspoon of chili pepper
  • 1/2 teaspoon of pepper
  • 1/2 teaspoon of paprika
  • 1/2 teaspoon of garlic powder
  • 2 tablespoons of beef stock

 

 

Directions:

  • Heat a large skillet over medium high heat
  • Add onions and peppers, cook until soft, about 5 or 6 minutes
  • Add andouille, saute until slightly charred
  • Add cooked rice, stir together until well heated
  • Add in spices, mix together and serve
