(Crockpot) Beef and Barley Stew


This is by far one of the easiest recipes I’ve ever made. Basically just throw all the ingredients into your crockpot and turn the switch to on. Done. There’s a tiny bit of chopping and measuring, but no actual cooking here – the crockpot does all the work for you! These are my favorite recipes. If I could use my crockpot every night for dinner, I promise you I would! This one was a real hit with my hubby – he loved the barley. Usually he isn’t a huge fan of beef stew (I am however!) so I was happy that he enjoyed this so much. Seeing him enjoy the food I’ve made him just makes my day, every day. It’s one of my favorite things in life. I try to incorporate at least one soup or stew into our menu once a week, and this turned out amazing. Super hearty and filling without having to consume a huge serving, and full of vegetables swimming in a flavorful broth that will keep you coming back for me. Give it a try – what’s to lose?! Serves 4


  • 1 and 1/2 pounds stew meat
  • salt and pepper
  • 36 oz beef stock
  • 1 cup of chopped celery
  • 1 cup sliced white button mushrooms
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup of diced potatoes
  • 1 cup of diced carrots
  • 1/2 cup pearl barley, rinsed
  • 2 teaspoons of thyme
  • 1 teaspoon of oregano
  • 1 teaspoon of basil
  • 1 teaspoon of parsley flakes




  • Dice all your veggies, throw in the bottom of crockpot insert
  • Add spices
  • Add stew beef over veggies
  • Pour beef stock in
  • Add barley
  • Add salt and pepper
  • Let cook on low for 8 hours or high for 4
  • Enjoy!!
