Mini Taco Cups

Hello followers!

We’ve been in the process of moving into our new rental house – so I have had very little time to post.. Until now! We aren’t quite unpacked yet but I’m trying to make the most of this open window of time! Today I have a super easy, yummy, healthy dish for you today! These little taco cups are delicious and so easy to make! Very quick too and relatively healthy – minus the wonton wrappers!? 🙂 Check out my cute Pioneer Woman napkin – I love this set! So country and rustic, LOVE them! Give these a try and let me know what you think in the comments! As always – I would love it if you would sign up and hit that subscribe button! Thank you! Hopefully I’ll be back soon with another great recipe 🙂 Happy baking!

Serves 2

Ingredients:

  • 12 wonton wrappers
  • 1/2 cup of canned corn – drained
  • 1/2 cup of back beans – drained and rinsed
  • 1/2 cup of diced roma tomatoes
  • 1/4 cup of diced red onion – if desired
  • 1/2 cup of cooked, diced chicken
  • 1/2 of a fresh jalapeno, diced and seeded – if desired
  • 1 cup of freshly grated Monterrey jack cheese
  • cilantro to garnish – if desired
  • Fresh lime

Directions:

  • Line a muffin pan with one wonton wrapper in each holder
  • Add about a tablespoon of each ingredient, top with cheese
  • Top each cup with another wonton wrapper, repeat step 2
  • Bake at 400 degrees for about 8 minutes or until golden brown and cheese is melted, keep an eye on them because mine cooked much faster than I thought they would!
  • Squeeze a little lime juice over them
  • Serve with salsa and sour cream if desired, and garnish with a little cilantro
  • Enjoy!!

“Therefore do not be ashamed of the testimony of our Lord or of me His prisoner,
but join with me in suffering for the gospel according to the power of God,
who has saved us
and called us with a holy calling, not according to our works, but according to
His own purpose and grace which was granted us in Christ Jesus from all eternity,

10 but now has been revealed by the appearing of our Savior Christ Jesus,
who abolished death and brought life and immortality to light through the gospel,

11 for which I was appointed a preacher and an apostle and a teacher.
12 For this reason I also suffer these things, but I am not ashamed;
for I know whom I have believed and I am convinced that
He is able to guard what I have entrusted to Him until that day.”

2 Timothy 1:8-12
