Mini Taco Cups

We’ve been in the process of moving into our new rental house – so I have had very little time to post.. Until now! We aren’t quite unpacked yet but I’m trying to make the most of this open window of time! Today I have a super easy, yummy, healthy dish for you today! These little taco cups are delicious and so easy to make! Very quick too and relatively healthy – minus the wonton wrappers!? 🙂 Check out my cute Pioneer Woman napkin – I love this set! Serves 2


  • 12 wonton wrappers
  • 1/2 cup of canned corn – drained
  • 1/2 cup of back beans – drained and rinsed
  • 1/2 cup of diced roma tomatoes
  • 1/4 cup of diced red onion – if desired
  • 1/2 cup of cooked, diced chicken
  • 1/2 of a fresh jalapeno, diced and seeded – if desired
  • 1 cup of freshly grated Monterrey jack cheese
  • cilantro to garnish – if desired
  • Fresh lime




  • Line a muffin pan with one wonton wrapper in each holder
  • Add about a tablespoon of each ingredient, top with cheese
  • Top each cup with another wonton wrapper, repeat step 2
  • Bake at 400 degrees for about 8 minutes or until golden brown and cheese is melted, keep an eye on them because mine cooked much faster than I thought they would!
  • Squeeze a little lime juice over them
  • Serve with salsa and sour cream if desired, and garnish with a little cilantro
  • Enjoy!!
