Balsamic Cranberry Chicken

 

Hello friends!

We are in the lovely process of moving, which is why my posts have been few and far between lately.. A few weeks ago I made this amazing chicken recipe – it’s to die for! Very easy, healthy and nutritious! We both loved it. This chicken is not only delicious but beautiful too 🙂

 

 

Ingredients:

  • 4 chicken thighs, bone in skin on
  • 3/4 cup of cranberries fresh
  • 3 cloves of garlic
  • 2 sprigs of rosemary
  • 5 tablespoons of balsamic vinegar
  • 3 tablespoons of honey
  • 1 and 1/2 tablespoons of low sodium soy sauce
  • salt and pepper
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried oregano
  • 1/2 teaspoon of red pepper flakes
  • 2 tablespoons of olive oil

 

 

Directions:

  • In a food processor or blender, place 1/3 cup of cranberries, balsamic vinegar, garlic cloves, soy sauce, olive oil and honey and pulse until blended
  • Place chicken in a plastic bag, add marinade ingredients from food processor and spices, marinate for at least two hours or overnight (I didn’t have time to do this so I just skipped this step – it still turned out amazing 🙂
  • Preheat oven to 375
  • In glass baking dish, place chicken skin side down, top with 1/3 cup of fresh cranberries and minced rosemary
  • Whisk together another 2 tablespoons of honey and 2 tablespoons of balsamic vinegar and pour over the chicken
  • Bake for 20 minutes, then flip chicken and bake for another 20 minutes or until cooked through, broil for 5 minutes right before serving until crispy and serve!
