Spinach and Mushroom Pasta

 

Hi friends!

Today I have a super easy, yummy, quick and healthy meal for you! I love experimenting with different pasta recipes, this one was a total success. I’m working on getting a lighting system for my photo ops, so please bear with me as I work toward this goal. If you have a protein meal in mind, just leave out the chicken and you have a great side! This is practically a one pot meal, and I love that. Give it a try and let me know what you think! 🙂

 

Serves 2

Ingredients:

  • Two handfuls of spinach
  • 1 cup of chopped mushrooms
  • 1 cup of uncooked pasta
  • 1/4 cup of chicken or vegetable stock
  • 1/2 cup of diced cooked chicken – if you prefer
  • 1/4 cup of heavy cream or half and half
  • 1/4 cup of freshly shredded parmesan or cheese of choice
  • salt and pepper
  • 1/2 teaspoon of thyme
  • 1/2 teaspoon of basil
  • 1/2 teaspoon of red pepper flakes

Directions:

  • Cook pasta according to package directions, set aside
  • In a large saucepan, heat a drizzle of olive oil to medium high heat, saute mushrooms until soft
  • Add chicken stock and heavy cream, stir and add spices
  • Add in pasta and chicken, then spinach, stir
  • When spinach is wilted, add in parmesan cheese until melted, serve hot!
