Parmesan Mushroom Gnocchi

 

Hi friends!

So this was my first time making gnocchi – it was store bought, but still my first time πŸ™‚ and it turned out GREAT! Super easy and so yummy! Gnocchi was one of those things I had always wanted to try as well as cook, as soon as I did get the chance to try it, I was hooked! It is just one of those sides that goes with absolutely anything, it can be tuned to whatever style your meal takes. So give it a try and let me know how it turns out! Do you like gnocchi? Serves 2

Ingredients:

  • 10 oz of store bought or home made gnocchi
  • 1/4 cup of freshly grated parmesan cheese
  • 1/4 cup of freshly grated white cheddar
  • Β 1/4 cup of heavy cream
  • 1/2 cup of chicken stock
  • 1 cup of chopped mushrooms
  • salt and pepper
  • 1/2 teaspoon of red pepper flakes
  • 1/2 teaspoon of thyme
  • 1/2 teaspoon of parsley – preferably fresh
  • olive oil

Directions:

  • Cook the gnocchi according to package instructions (Boil water, drop gnocchi in and remove when it floats to the top, this only takes a few minutes)
  • Set gnocchi aside
  • Heat a skillet to medium high heat, swirl with olive oil
  • Saute the mushrooms until soft
  • Add the gnocchi, sear slightly
  • Add chicken stock and cream, stir to combine
  • Add spices
  • Turn heat down to medium, add cheeses
  • When sauce has thickened, remove from heat and serve!
