Honey Lemon Chicken Thighs

 

This chicken was hands down amazing. And it was SO easy to prepare! Just a few simple steps and then pop it in the oven to finish cooking – and it’s done. I can’t say it’s fast – because there is no way to quickly cook chicken thighs – but it’s SO simple and the steps before you do bake to finish it in the oven are fast! This recipe is great and everyone will love it. Not spicy, just sticky, sweet with a little bit of a tangy Asian twist. I’m growing to love chicken thighs more and more, and I’ve already found some AWESOME recipes. This was one we absolutely loved – and hope you do too!

 

 

Ingredients:

  • 4 chicken thighs
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of lemon pepper seasoning
  • 1/2 teaspoon of red pepper flakes
  • 1/2 teaspoon of salt and pepper
  • 1/2 teaspoon of thyme
  • 5 garlic cloves
  • 1 lemon, zest and slices
  • 1 tablespoon of lemon juice
  • 1/2 cup of honey
  • 1 tablespoon of soy sauce – low sodium
  • 1 tablespoon of red wine vinegar

 

 

Directions:

  • Mix together all ingredients but the chicken, lemon slices and garlic cloves
  • Place chicken skin side up in a hot skillet with a little olive oil, then drizzle a tablespoon of sauce on each piece of chicken
  • Sear both sides of chicken, then place in a glass baking dish, skin side up
  • Pour half of the remaining sauce over the chicken
  • Add the lemon slices and cloves of garlic to the dish with chicken
  • Bake in a 375 degree oven for about 45 minutes or until chicken is cooked through
  • In the same skillet you seared the chicken, add the remaining sauce and bring to a boil, let thicken, then turn heat to low
  • When the chicken is done, top with the rest of the sauce and serve!
