Sun Dried Tomato Basil Hummus

I’ve always wanted to try making hummus at home. It’s such a simple and super healthy dip – packed with protein and flavor. Today I finally got around to it! Happy birthday to my hubby – he picked the flavor – he apparently loves sun dried tomatoes so I had to give it a try 😉 It turned out really yummy! Mine is a little thick, so I think next time I will add an extra tablespoon of olive oil – or retain the liquid of the beans like I was supposed to.. Anyway. I also didn’t have any fresh basil, so I substituted with just a half a tablespoon of dried, I’m sure it would have been much better with fresh! It still turned out delicious, sweet with a tiny kick.   • 2 tablespoons of fresh chopped basil
  • 3 tablespoons of lemon juice
  • 2 tablespoons of tahini
  • 1/2 teaspoon of salt
  • 1/2 cup of chopped sun dried tomatoes
  • 2 tablespoons of oil from sun dried tomato jar (or olive oil)
  • 16 oz of chickpeas, drained with liquid reserved
  • 1 teaspoon of red pepper flakes
  • 1/2 teaspoon of pepper





  • Add chickpeas to food processor or blender, blend until smooth
  • Add all other ingredients, blend well
  • Check consistency, if too thick, add a little of the reserved chickpea liquid or extra oil from sun dried tomatoes
  • Enjoy!
