Popcorn Nuggets


These chicken nuggets are airy, fluffy, lightly fried in a skillet, and delicious dunked in ketchup, honey mustard or whatever sauce you like! Kids and adults alike will adore this chicken! I know we do 🙂



  • 2 Ibs chicken breasts or tenderloins
  • 1 tbls of baking powder
  • 1/2 cup cornstarch
  • 3/4 cup of flour
  • 1/2 tsp salt
  • 1/2 tsp red pepper flakes
  • 1/2 tsp paprika
  • 1/2 tsp pepper
  • 1 cup of buttermilk, milk, or heavy cream
  • Peanut or vegetable oil for frying



  1. Cut your chicken into bite size pieces
  2. If you have the time, soak the chicken in milk for a couple of hours, if not just let it sit while you gather the rest of your ingredients (that’s what I always end up doing)
  3. In a medium size bowl, add the flour, cornstarch, baking powder and spices, and mix lightly
  4. In a shallow skillet, add about a 1/2 inch of oil and heat to medium high or 375 degrees
  5. Using your hands, dredge the chicken in the flour mixture and drop into oil
  6. Cook for about 4-5 minutes a side, using a meat thermometer to determine doneness or by cutting into the biggest piece to check
  7. Fry rest of chicken and enjoy!
