Fresh Veggie and Kielbasa Pasta

We love pasta. This pasta is a little bit guilt free since its full of fresh vegetables and yummy kielbasa sausage! I make a creamy sauce to bind it all together at the end combined with freshly grated parmesan cheese. If you want a more healthy pasta meal, here’s a great one!

Serves 4

Ingredients:

  • 1/2 c chopped zuchinni
  • 1/2 c chopped yellow squash
  • 1/2 c chopped button mushrooms
  • 1/2 c chopped onion
  • 1/2 c cherry tomatoes
  • 1 cup sliced kielbasa sausage
  • 1/4 c chicken stock
  • 2 tbls. milk, half and half, or heavy cream
  • 1/4 c grated parmesan
  • lots of salt and pepper
  • 1/4 tsp basil
  • 1/4 tsp red pepper flakes
  • zest of one lemon
  • juice of half a lemon
  • olive oil
  • 2 cups uncooked pasta

Directions:

  1. Saute veggies in a little olive oil
  2. Cook pasta according to box directions or until tender
  3. Saute kielbasa until charred
  4. In large skillet, combine kielbasa and veggies, add chicken stock, milk, lemon zest and juice and bring to a boil
  5. Add in pasta and Parmesan, mix well
  6. Serve topped with more fresh Parmesan
  7. Enjoy!
