Chicken Pot Hand Pies


This is what we had for dinner last night. I’ve always loved chicken pot pie, but since there’s only two of us and I only have a toaster oven to cook in, making the traditional pot pie wasn’t very practical. So I found a new idea I hadn’t tried yet. These chicken pot hand pies. And they are super yummy!! And the best part… NO FROZEN VEGGIES!


Serves: 2 of course


  • Betty Crocker pastry dough or puff pastry
  • 1/2 cup diced onion
  • 1/2 cup diced celery
  • 1/2 cup diced carrots
  • 1/2 cup diced mushrooms
  • 1/2 cup diced cooked chicken
  • 1/4 cup milk
  • 1/4 cup chicken stock
  • 2 tbls. flour
  • olive oil
  • 1/2 tsp red pepper flakes
  • 1/2 tsp salt and pepper
  • 1/2 tsp basil
  • 1/2 tsp Mrs. Dash grilling spice mix

  1. Cook the chicken however you want (I usually just saute mine with -you guessed it – Mrs. Dash grilling blend spice mix)
  2. Dice all the vegetables
  3. Using the same pan you cooked your chicken in, saute all your veggies with a little olive oil except the mushrooms for about 5 minutes
  4. Add your mushrooms
  5. Add all your spices
  6. Add in your diced chicken
  7. Add your flour
  8. Add your stock and milk, bring to a boil until thickened
  9. Remove pan from stove
  10. Roll out your pastry dough, cut into circles or rectangles, whichever you prefer
  11. Place cutouts on lightly oiled cookie sheet, fill with pot pie filling, then cover with top pieces of dough
  12. If you want – brush with egg wash – this makes them extra golden and pretty 🙂
  13. Cut two small slits in the top
  14. Bake at 375 degrees for about 15 minutes – until golden brown and bubbly
