This chicken was completely amazing. I’ve never had it at an actual Chinese restaurant, but I definitely don’t need to after making it myself – it turned out so good! The original recipe was just pineapple chicken but I added a few ingredients to spice it up a little bit – the breading however was great and this is definitely my new go to for Asian chicken breading recipes! The coloring of the breaded chicken looks a little off since it has soy sauce added to it, but it still tastes great. Hope you enjoy it as much as we did!
Ingredients for Chicken:
2 chicken breasts or 6 chicken tenderloins
2 Tbsp. soy sauce
1/4 tsp. pepper
3 Tbsp. flour
3 Tbsp cornstarch
peanut or vegetable oil for frying
Ingredients for Sauce:
1/2 cup pineapple chunks
1/2 cup pineapple juice
1/4 c. brown sugar
1 Tbsp. soy sauce
1 Tbsp. red wine vinegar
2 tbsp honey
dash of red pepper flakes
1) Cut chicken into bite size pieces, mix with soy sauce, pepper and egg, if you have the time, let it marinate for two hours in fridge.
2) Add flour and cornstarch to chicken to create a thick batter. Heat oil in large frying pan on medium high heat – 375 degrees. Add chicken and fry until chicken is browned, turning to brown evenly. Remove chicken from oil onto plate lined with paper towels.
3) In a medium saucepan, combine pineapples and pineapple juice, bring to a boil and add the rest of the sauce ingredients.
4) Add chicken pieces into saucepan and mix until thoroughly coated. Serve with fried or white rice – or like us – sauteed veggies or whatever you like – and enjoy!
